There are two methods that can be used for updating the OS after a clean install, they are DISM++ or SIMPLIX [preferred]. Here is an overview of them both . . .

DISM++ [Deployment Image Servicing and Management] Overview

DISM++ is a FREE implementation tool that has the ability to perform Windows Updates [WU]. Some of the advantages [but not all] are:

[1] The GUI is very easy to understand and use.
[2] It is much faster than M$’s WU because it uses a different engine.
[3] It downloads the latest WU DB from the M$ servers, scans your OS, and then lists the updates available.
[4] It doesn’t install superseded updates like M$ does.
[5] It gives you the option of what you want to install.
[6] The pre-ticked updates are what is recommended and are similar to the WU critical and recommended updates. The un-ticked updates are similar to the WU optional updates.
[7] It warns you if an update:
  • Includes telemetry.
  • Has known issues with certain hardware.
  • Needs exclusive access.
  • Is suspect.
  • Your OS doesn't need it.
  • Has any other known issues.
[8] It doesn’t require re-booting between updates.
[9] It can be used to either update an install.wim image OFFLINE, or to update the LIVE OS.

SIMPLIX

It will update your OS automatically [it will re-boot a couple of times during the update process which is normal] and DOESN’T include any telemetry updates or processor checks [disables/patches detection of processor generation and hardware support when scanning or downloading updates through WU]. It installs the correct USB3 drivers and cleans up when it has finished. It requires NO user input.

UpdatePack7R2-19.10.10.exe /WimFile=path_to_wim /Index=IndexNumber

Optional switches include /NoUsb if you don't want to include simplix's usb3 pack
/IE11 if do you want to include IE11 /TEMP if you want to specify instead of the default

Example:
UpdatePack7R2-19.10.10.exe /ie11 /NoUSB /WimFile=C:\extracted-iso\sources\install.wim /Index=3

Or use this:

Update your Win 7 installation media.

A lot of time and right after it said completed I get a DOS window saying something about failing to unmount image.

Can't even find where the mount folder is.

Do you understand what mounting an image means.
it is not a permanent folder on your drive!

Once the disk image has been mounted, its contents will appear as a physical disk in the computer. ... Disk images can also be unmounted, which may free up some RAM used by the system to mount the image. To unmount a disk image in Windows, open "My Computer," select the disk image, and click "Eject this disk."

install.wim is a folder within an ISO image that contains
WIM File Extension - What is a .wim file
