That Longhorn file is just an example they used. You will open up the .mstyles with Restorator by navigating to C:\Windows\Resources\Themes\YOUR THEME FOLDER and then follow from step two down.

and if i put back the original folder, why will it change my all themes font? it just the aero or not?
i dont know it matter something, but my themes are in other folder..
in windows/user/user/loca/microisoft/windows/themes

That helped clear up a lot for me.
The themes you have in the 1st screenshot cannot be changed with Restorator and Notepad++ the only way to change the fonts in them would be to start the theme one by one and editing each one through Windows Color and Appearance in using the drop-down menu selecting each item and changing the font where it can be changed and then saving it using one of the tutorials I posted earlier. You are not using third-party custom themes you are using ThemePacks

These are third-party themes Browsing Visual Styles 7 on deviantART someone made these from scratch most of them were probably made with Windows Style Builder if you notice some of the screenshots I have posted that is a third-party custom theme.

To change the folder background color I use Windows Style Builder
To change the icons you need a resource hacker to edit the system .dll
