There's a lot that could easily be skipped. I personally don't skip the Windows update client updates as they've been beneficial to my system and they don't seem to do anything when installed alone.
My Windows update has seen a vast improvement in scan times and a massive reduction in Memory and CPU usage when scanning. I haven't experienced anything being downloaded on any of my systems or numerous VM's with just the update clients installed. They seem to need telemetry updates installed alongside before they will even download anything.
Of course, if people are airing on the side of caution and windows update is working fine then I would avoid them.

You'll especially notice the difference on a new VM, I've had to wait 8+ hours for windows update to pick up all the updates. With the latest WU client they are all picked up within 5 - 20 minutes.
