I have a similar setup, with a 620 watt Antec power supply (see my specs). The 750 watt should be more than adequate for what you have.

It's good, as long as you stay with a single GTX680. It might be adequate with two GTX680s if you don't overclock the I7-3820.

I know of no way that an inadequate PSU would cause loss of performance, unless you regard unreliability as poor performance. In the extreme, the PSU could fail, and take other components with it.
