Is there any way to change the way video folder contents are displayed in the Windows 7 Media Centre? Displaying titles in a pattern of squares makes them very difficult to read - I'd like to display the folder content as a simple scrollable list of filenames. Can this be done?

Yes and it's easy! When you have your movie library displaying in WMC7, right click and you have several options. I added screenshots of mine to help you out...

That looks good - thanks.

As a matter of interest, is there any way of changing the display using only the MCE Remote Controller?
