Changing how the taskbar behaves

I've spent the past few hours making 7 act the way I want it to (slapping it around, as my roommate elegantly puts it), but there's still 3 things I would like to know how to do:
1) remove the window preview when I mouseover a taskbar icon. I did some searching and found lots of solutions that said to edit gpedit.msc, but when I searched, I found 4 copies, all of them give the error "MMC could not create the snap-in" when I attempt to open them.
2) fix the alignment of taskbar icons. I often have lots of windows open, as I'm often playing around in GIMP, Illustrator, with a bunch of web browser windows open, so I use a double-thickness taskbar. I also have some serious OCD about stuff lining up properly.

It should be easy to see why this just will not do.
3) Remove the superfluous show desktop button on the far right. I have the botton in my quick launch, where it belongs. I don't need another one taking up space.

I really like the Aero theme, so I would really hate to use the windows classic theme to fix these issues. I loved the win98/XP theme, but in windows 7 classic just looks...not quite right. Like when you ask a girl out on a date and she sends her identical twin brother in a wig as a prank.

There's a couple other things I'd like to do, but they aren't as important. It would be nice if I could change the associated program for a filetype without changing the windows default icon for it. I use irfanview to open all jpg/gif/png images, but the irfanview icons are all ass-ugly compared to the windows default ones. I remember in XP I was able to have the default icon with whatever program I wanted, but I doubt that functionality was kept in place.
