I unfortunately only have CS4 which makes it pretty difficult to cut out images but if you have CS5 then there is a new option to cut out images (with hair etc.) *tip try and use as higher res images as you can get for this to work best

Just click on the create new layer button, it will create a new transparent layer

I personally use Photoshop CS5. Some other GFX designers here use Corel Draw.

I have cs5 myself but am not very good at using it for creating graphics. I'm quite good at photoshopping photos but not creating anything from scratch. .

However I'm going to save them both and probably alternate them at some point. I can't set them as my sig at the mo. as I'm on here via my iPod as I'm not home.
