Could I change "Default Programs" to "Add/Remove programs"?
Or even add a new entry in the start menu?

I haven't checked into a replacement of Default Programs, but you should be able to add Programs and Features shortcut to the start menu. There are variations of the command, but I use this one from a context menu and the Run box

Code:
rundll32.exe shell32.dll,Control_RunDLL appwiz.cpl,,0

or

appwiz.cpl for the short version, lol
