I accidently copied a file in the wrong direction and when asked if I wanted the fie replaced, replied yes, and the older file version replaced the latest version. When you "replace" a file, does the file space actually get written over, or does it likely remain intact and marked as a deleted file (that with the proper software can be undeleted)?

If you have a restore point, try Shadow Explorer to recover it. Just navigate to the file in SE, right click on it and Export. Here is my full tutorial in case you need assistance.
