Disable unneeded elements in WU. Drives me crazy

I have been enjoying Windows 7 since the early betas.
There is one thing, that I cannot solve, and drives me crazy.
So when I install the OS, enable Windows Update etc. And set it up to allow me to decide what to download.
When I installed MS Office 2007 Windows Update started offering updates for those too, and for programs, that even not installed. But it's okay, because they do not release updates that often.
But after I installed Windows Live Essentials - and only Windows Live Messenger, and Silverlight, Windows Update started offering updates for Outlook junk mail definition databases (I don't know the exact words there, not using English language settings). But I do not have that program! Any idea how to disable that? And not the whole update, only those elements, that even not installed.

Another issue: I have got a HP laptop, and Fn + F3 F4 Brightness control worked fine for ages with the Seven, but since last week it is locked up. I have to restart the machine, and than it works, so it is not a hardware issue. I have not installed anything, nor software, nor drivers, nothing.

My main problem is that I cannot turn that off, because I havent installed that.

So it's like buying winter tires for non existing car.
