Downloading in background

Windows update is configured to check for updates but let me choose whether to download and install them.

I selected a few updates I wanted, and started the update, it completed successfully.

However it continues to download unselected updates in the background. It's almost as if it just does not care whether I want to or not and thinks I wont know about it.

I have nothing else running, besides standard windows processes and my security software which is up to date and not downloading (yes, that is humble enough to tell me when it's doing something).

How to I stop windows aggressive downloading and using my limited bandwidth, uninvited?

(edit) I mean I can stop it by manually disconnecting / unplugging my network card, and it wont start again in the session, but I don't want it to act that way at all, ever.

There are some updates which are mandatory - you don't get the option as to whether to download/install them. They are very few, but very important (and not large, as far as I remember).
Which partiular updates are you concerned about? What security software is installed?
