Most sending mail servers will retry to send the mail over several hours if the receiving mailserver is down/not responding before returning it to sender as undeliverable.

I never wanted to risk loosing email even though I wanted to play with running my own web server. So I tell my ISP to handle the mail on their server (which includes spam blocking/quarantining) but point website requests to the IP of my web server.
