Wow, I can't believe there are no W7 drivers for that printer. I have both an Epson Stylus Photo R800 and an Epson Stylus Photo 2200 and Epson has provided Windows 7 64-bit drivers for both. I've had my 2200 since 03, and my R800 since 04. In fact Epson just released a new W7 64-bit driver set for my 2200 on 11 Dec 09.
Yeah I know not all their printers are going to have W7 support, but the Pro or Photo series printers should, and I believe that 7000 falls in that catagory.
The only thing I can say to that is try running it in comaptiblity mode, or If you have an XP machine, hook it up to it and have the XP machine share it.
Yeah I know - it sucks! A friend suggested I could try running XP as a virtual PC within windows 7 and print from there - he wasn't sure if it would work but I'm going to give it a shot. I'll let you know if it works!

It works!... This could be a good solution for anyone wanting to print to an old printer. Windows Virtual PC is free from microsoft and it doesnt require partitioning your hard drive, or restarting when you want to print - you can also access all your documents directly from the virtual machine.
So there you go!
