You're running into the politics of Intel and Microsoft deliberately trying to block you from installing Win7 on a Kaby Lake processor. It can be done, though, and I just did it on a laptop about a week ago.

To resolve the video issue, I followed this How-To video. I'd use the Intel driver as it's probably the most current, but if you prefer you should be able to use the mobo's driver if you make the same tweak as the video outlines for the Intel driver. The only trick might be finding the corresponding INF file in the mobo's driver (it may use a different name and be in a different location).

Basically, the process takes the Intel driver and modifies the INF file to says it's okay to install on Win7/8/10 instead of just 10. (Side note: the video says to get the Intel driver from download.intel.com, but that's incorrect--it's at downloadcenter.intel.com.)

Once you get around to trying to install Win7 updates, you may want to install the wufuc patch.

Wufuc seems to be necessary only if you want to use the online Windows Update. I usually use WSUS Offline Update to (relatively) quickly mass-update a fresh installation, and when I did so I noticed it had no trouble applying updates, wufuc or not. But when I tried to follow that up with letting Windows Update "scan for updates" from within Windows, I got the "Unsupported hardware" message until I installed the wufuc patch.
