You can use this to assign a shortcut key to a program. It's the same in Windows 7. It uses CTRL+ALT+(key).

If the program doesn't have a option to add or remove it's icon from the tray, then you might see if selecting the
Hide icon and notifications in the
Notification Area Icon settings may be able to hide it for you.
