Right, so if I have a Windows 7 Ultimate RTM ISO (its the legit MS one), can I install the Home Premium version from this ISO using a Home Premium key during setup? Or will I have to wait until an ISO of Home Premium turns up?

I don't recall seeing a screen that allowed me to select which version I wanted like in the Vista setup...

I'm aware I can rebuild the ISO using vLite but I'd rather not since the program hasn't been updated to support Windows 7 and might leave me with a buggy build of Home Premium.

It won't...the only thing you need to do if delete ei.cfg from DVDROOT/sources and rebuild the ISO...than you can choose the edition you want to install
