Is there software out there that can examine all folders of a specific source and all its sub-folders (nested up to 40 folders) and output the number of files and types?

There must be something that does specifically what you request but I don't recall seeing it. I would check the freeware sites such as snapfiles, softpedia, download.com and sourceforge.net
