i dont no if this as been asked before but with the ie 9 platform prviews what do they install and can you uninstall it to go back to ie 8

The platform preview is not a full browser, it's just the rendering engine .dlls and a webbrowser control container (it's not a full browser). You can install it on a system with IE8 and it won't overtake IE8, because all of the shell functionality and the actual UI stuff for IE isn't installed with the platform preview like it would for a beta or a full version. You can remove it if you're done using it and it won't have any effect on the IE8 install on your system.

It (the preview) only installs an interactive demo. Your IE8 is untouched and can be used along side this demo.

Well if you like testing or playing around with the newest technologies in web browsers, you should really give the platform previews a try. If you're a regular user, I'd recommend staying away from IE9 as it might contain bugs, leaks or crashes that could cause you to lose some of your data. You can't rely on Alpha/Beta releases of browsers.

If you plan to install the upcoming beta, that *may* overwrite IE8. we'l have to wait and see.

It will overwrite it, because the beta will be a "whole code" beta similar to the IE8 beta. More than just the rendering engine needs to be tested, including OS integration, UI, etc. The IE9 beta will be basically the same as the IE8 beta, installation-wise, aka a full product installation. You really don't want to do this on any production machines, because it could be buggy, and removal might not go 100% as planned if you need to get rid of it .
