When Windows 7 reached its official EOL in January 2020, Internet Explorer was at version 11.0.170

With the deployment of post-EOL ESU updates the following month, Internet Explorer increased its version every month by 5 (175, 180, etc.).

In September, it was at version 11.0.210

I was expecting it to increase to version 11.0.215 this month, but it remained at version 11.0.210

This also occurred with Internet Explorer in Windows 10.

Why do you expect for sure that it must be an update this month?
The fact that it has been previously released doesn't implies that it'll be always that way. It couldbe perfectly possible that IE hasn't seen any changes at all this month, specially considering that it's only receiving bug-fixes in maintenance mode and hasn't seen a single new feature since 2013!

Unless you know for a fact that you're missing a new version (and you also know that there is something worth updating to), I don't think there is anything out of ordinary here.

I was just wondering why this is the first time in the past 10 months of 2020 it didn't update.
I haven't heard anything yet about Microsoft completely killing it in Windows 7 and Windows 10.

IE is receiving only bug-fixes (aka "security updates), but Microsoft made it clear years ago that all further development will happen in Edge. And since MS also lost all interest in Win7, they won't care that much about it either.
At some point, it's natural to stop seeing updates (there is only a limited amount of bugs you can fix without introducing anything new). It may have happened now, or maybe they're prioritizing other things. You can't put too much faith in the release cycle of a fundamentally dead product.

well flavallee Microsoft released the KB4586768 security update for IE11 several days ago (only available for IE11)

I'm not sure if this new update will change the IE11 version number
