Is there anyway I can set up an extra Monitor as a virtual machine?

I know its an old thread, but. . . It seems like half of the responses in this thread had no more of an idea how to do this than the OP. What you are trying to accomplish is definitely possible if the requirements are met:

This would work using a VM with PCI passthrough by supplying the VM with direct access to a USB add-on Card and Videocard. This would most likely require VT-D and I am not sure it can be accomplished without a real hypervisor, in which case it would still work by passing through the hardware in the same manner with multiple VMs.

Also, as already mentioned, USB passthrough is a possible solution. You could pass through an independent USB video adapter to provide an independent screen to the secondary monitor.

Most likely, mounting a Raspberry Pi in this case would be an easier solution than the first, and a cheaper solution than the second.

That solution requires specific equipment, and is still dependent on compatible software which may or may not be attainable. Not much of a solution.
