Is iTunes stable with Windows 7 now? I've read there have been some issues.

Also, on the download site there are two options... a normal version and then a 64-bit installer that it says is for 64-bit Win 7, Vista, etc. When you follow that link it says it only mentions Vista as a system requirement. Is that the correct one for 64-bit Win7?

Yea, it works on my x64 Win7 Pro system. However, it has some weird behaviors. First of all, the "64-bit version for Windows 7" installs into the x86 folder. Ok...? Additionally, after pinning it to the taskbar, when you open it, it creates yet another icon on the task bar as the anchor, rather than using the permanently anchored icon that has been pinned, like the rest of the programs on the task bar.

Just a bit of weirdness going on there. Maybe it's just me.

Looks like a new version of iTunes just came out today. At least for the 32 bit machines. Not sure about 64. It's version 9.0.3.15.
