Today, Malwarebytes 1.75 Pro updated itself to Malwarebytes 2.0 Premium when another family member used my laptop. Is this normal behavior and has it happened to anyone else?

It does it when you hit the update version request, or at least in my case. I like the new version but the old version was working perfectly as well. Some here have complained about the new version having issues which I can't confirm but I can say the new version seems to be doing it's job in my case.

2 of my machines automatically updated themselves and 2 have not. I have no idea why the difference as they are all lifetime pro versions purchased recently.
