I'm planning on upgrading my video card and I was wondering, I've read that ME2 is mostly CPU intensive. So would upgrading my video card from EVGA 8800gtx superclocked to a EVGA GTX 470 see a significant improvement for this game at all?

Not really. I upgraded from an 8800GTS 512 to a GTX470 and there was no major difference in ME2.

it will ... 8800 is really old so upgrading to one of the best cards will have a huge difference
here's a comparison between the two cards
Video Card Comparison - GPUReview.com
so as you see there is a big difference and with the new card you will be able to run at high graphics with high FPS and thus better game play
