Just bought a AOC Q3279VWF 31.5" monitor. Everything hooked, drivers installed but the max resolution I'm getting is 1920 x 1080 instead of 2560 x 1440. The max resolution isn't even listed in the drop down. What am I doing wrong?

I notice that the settings on the monitor itself (where one sets brightness and all that) is also says 1920x1080. However the manual clearly states 2560x1440 using HDMI so...
Pretty sure its me thats missing something. Googled this but nothing leaps out at me.

Are you still running the GTS250 card you have in your specs here? The card is pretty old and I think I have a vague recollection of running the same cards myself and HDMI would only do 1080, DVI was fine though - try a DVI if you have one.
It is an old card, yes, but the specs show it being capable of running the monitor at full resolution. I don't know if I have a DVI cable, will have to root around for one...

That's weird that your monitor controls are showing 1920x1080 max. Just to be precise about what hardware you have, can you do start > run > wmic PATH Win32_videocontroller GET pnpdeviceid |clip > press enter, then do a right-click paste into a reply to this post. That will tell us your graphics adapter hardware device ID.
While you are at it, you might also do start > run > cmd > press enter > dumpedid. You will have to put dumpedid in your path, I put mine in my c:\windows folder. You get it here
