I always enable EIST, lets your system run cooler with no affect on performance.

Highly recommend to replace your CPU thermal paste.
The paste will age and loose the ability to transfer heat from your CPU, this is the biggest cause of CPU overheating.

Your CPU temp programs are pretty accurate, I don't think adjusting them will help.

I have ordered some arctic silver thermal compound and cleaning solution to clean the old stuff off.

ArctiClean 1 Thermal Material Remover quickly emulsifies and dissolves the existing thermal grease or pad from the CPU and/or heatsink so that it can easily be removed with a clean cloth or paper towel. A few drops of ArctiClean 2 Thermal Surface Purifier and some gentle wiping then removes the remaining residue and inhibits flash corrosion on copper or aluminum.
