Need options for backing up/saving files from Windows 7 desktop to USB

I have a 7-8 year old Gateway desktop that is having problems remaining responsive - not sure if it's memory, or a drive issue, but commands or applications will sometimes not work, will take tons of time to complete, or the system will simply become unresponsive after some time. Ran a full scan on it, and cleaned everything up virus-wise, and disabled a bunch of startup applications from safe mode. Anyway, given the age of the system, rather than investing time into troubleshooting this old system, I decided to simply buy a newer Windows 10 system and just move my files over to it.

Howerver, I'm having problems getting the files off onto a USB external drive; Windows Easy Transfer is taking forever (estimating the transfer time to be between 24 and 33 days, this after running for about 6 hours), and wbadmin won't run in safe mode for some reason. Haven't tried in normal mode, but having better luck keeping the system responsive when running in safe mode.

I haven't tried simply moving important files, music, photos over to the USB drive via Explorer - not sure this is a good option?

Any other suggestions? I'm not really concerned with keeping my exact environment, desktop, logins, etc., I just want the important files themselves.

Thank you. Windows Easy Xfer estimated it to be around 80GB, mostly music files and photos. Copy via the network - command line copy, xcopy, using 'net use', ...?
