Okay, so I just bought me a laptop that I can use to mess around with. I have set it up to my desktop monitor to serve as a server. I'm planning on making it sort of like a ... media storage / server / offsite backup - Node. I have already installed a fresh copy of Windows 7 Ultimate 64 bit. Help me come up with this ideal plan ;)

What's the plan you need help with? A laptop doesn't make a good server, and you don't have a server OS installed on it, either. I also wouldn't trust a laptop or laptop hard drive as much as a tower computer, in terms of being a backup device.

You can always set an Apache HTTP Server: Apache HTTP Server - Wikipedia, the free encyclopedia
And get a free static IP from No-IP helping you with the router.

I too would not run a desktop based OS (windows 7) for server type things. Have you thought about trying to run a Linux server? It's certainly less costly than trying to purchase a license for server 2008.
