I have a quad core HP laptop with UEFI and Windows 8 (Hate it). Installed Windows 7 after finding the proper drivers. The question I have is that, what is the install difference between Ultimate and Professional in regards to how it names the partitions at installation? Why does one do the GPT partition and the other a MBR? Is there a way to change how Professional sets up the partition so it's not GPT to use Windows 7 Professional? Thanks for your help.

You can't boot off a GPT partition if you have turned off UEFI. Well you can but not without jumping through hoops and it's not something I recommend.
So what exactly did you turn off? UEFI and you boot in legacy only or do you mean after turning off Secure boot?
Do you still have Ultimate installed on that computer?
In any case both Ultimate and Professional 64 bits support UEFI and GPT (or BIOS and NTFS...)

I guess to simplify it, why does Ultimate partition and format a hard drive using a normal NTFS MBR with 2 partitions one being system, but Professional seems to add 3 partitions including a MSR partition although installs and works. Trying figure out why the different partitioning and naming between the two versions.

Probably because you had different settings in BIOS: UEFI or not. The extra MSR partition is what you get on GPT disks.

Did not touch the BIOS between installing the two as a test so that's not it. Must be a different partition format execution file in the software.

Where are you getting Win7? Which version do you have a license for?
 
There are no differences in installation requirements and procedure for w7 ultimate and professional.
