Plextor M5P 512 GB - partitions

Hi,

I will receive my unit next week!
I will make a fresh install of Win 7!
I would like to have 3 partitions in it:

1- OS and Apps
2- Data
3- System restore

There is any better time to make these partitions (ex. during Win7 install) or I could do with the same results at anytime I want?
