Poor Raid 0 Performance

Here are my specs and problem.
GIGABYTE GA-890FXA-UD5 AM3 AMD 890FX SATA 6Gb/s USB 3.0 ATX AMD Motherboard
16 GB G.SKILL Ripjaws Series 8GB (2 x 4GB) 240-Pin DDR3 SDRAM DDR3 1333 (PC3 10666) Desktop Memory Model F3-10666CL9D-8GBRL
2 SAMSUNG Spinpoint F3 HD103SJ 1TB 7200 RPM SATA 3.0Gb/s 3.5" Internal Hard Drive -Bare Drive in Raid 0 on Ports Sata 0 / 1
AMD Phenom II X4 955 Black Edition Deneb 3.2GHz Socket AM3 125W Quad-Core Processor HDZ955FBGIBOX
The problem is that Windows 7 runs fine and installs fine but when I install programs like Office 2007 or another program the computer stops responding until install is done. I notice that the Raid 0 Drives the entire disk will fill up and say no space left and then when program is done installing the hard drive space will drop slowly but back to normal. Things I have tried.
Put only 8 GB memory in different slots because know there is a issue with memory controller on AMD Processor.
Change Sata cables and messed around with bios settings.
Put Raid 0 on Gigabyte Raid ports.
Changed the temp directory for windows 7 and even told windows to use another drive for swap memory.
I tried different drives and they worked fine.
I scan the drives with samsung tools and no reported errors.
The drives are being cooled down with front case fan. Air flow is good. No blue screens of death.
Please help.

I was just wondering...I am a novice when it comes to RAID but I remember when I set up my first one I think I recall info saying that too small of a stripe could cause poor performance as could too big of one. There was a lot of opinion about this on various search engines . I am sure there is someone on this board with vast RAID experience that could offer some thoughts......
