This is probably quite simple but I will ask anyway.

I live in a shared house so I don't want all my folders shared willy nilly on the network.

I would however like to share folders between my laptop (windows 7) and my tablet (windows 10)

I have created a workgroup and joined both (I'm assuming this will mean that anyone not in the same workgroup won't be able to see anything) but I can't find a way to share a folder from laptop to "TABLET/USER" I can only pick local users.

Am I going about this totally wrong?

I'd like to share between just these two devices and make sure no one else can see my stuff

Thanks

If you want some real security, patch your own wireless router to the existing modem/router (LAN, not WiFi. Not the WAN port either, standard LAN port) and set it up appropriately. Essentially, you'll have your entirely own WiFi via this method. That's what I did. Worked a treat for me.

However, occasionally, you might have to log into it to "refresh"/get it to take the DNS credentials (especially if on a dynamic IP/lease). But that's no big deal, takes all of 20 seconds every so often (mine averages a goof about every three months; most often coinciding with the modem being reset). No issues otherwise, and I love the separate bandwidth too.

For your purposes, a ~$20 single-band would do just fine. Change the login, SSID and Passphrase from defaults (always), if necessary set it to WPA2-PSK (WEP is garbage), and I'd recommend also enabling MAC Address Filtering (if it's capable; most seem to be these days), but for that last you will have to log into the router every time you get a new device and manually add it's MAC in.

Point is, even if, somehow, somebody managed to get your file-sharing credentials, they most likely won't be able to also thwart your router's security. I don't even have a sharing password on my workgroup, I don't need it (only caused problems anyway).
