You shouldn't have any problems running on Ultra, even with the HD Texture packs (and a fair few mods). I don't believe you'd run into any VRAM problems, unless perhaps you're trying to use hundreds of mods simultaneously (or a few dozen but really large, extensive mods) and/or are extending the game across more than one display (multiple displays that way, and I mean when they're not just being used for desktop and one of them in the game only, really eat up VRAM, particularly if they're both/all HD resolutions. For that you really do need anywhere from 2-6GB VRAM cards, depending).
Most games, still, only demand 4GB RAM and 1GB VRAM at recommended specifications. Only the x64 varieties (e.g. Wolfenstein: The New Order - however, note even that one only recommends 1GB VRAM) demand more than that, and pretty much only because they're not bound to the same memory limitations as x32.
Really, VRAM is only something to take into consideration when you're extending the game across multiple displays. Otherwise, you really don't need to worry about it. Think about it this way, if a display by itself really used that much VRAM, then everybody on 512MB cards would be trapped in a nightmare on just one 1080P display. But they're not. The display itself really does not use as much VRAM as a fair few people seem to think. I had no problems having my 720P laptop display and my 1080P external display extended at the same time with my card's 512MB VRAM (absolutely no detraction in performance). And I did play Skyrim on that (albeit scaled back to Medium, because it would hit TJMax if I left it on High, where the auto-detect put it; the reason I went for a desktop).
