Your Norton products will continue to support Windows 7 for the foreseeable future.
They haven't defined foreseeable future, but it is reasonable to take that to mean at least as long as MSE i.e 2023. Thankfully, they won't be adding any more "features"
Hardware too. For example:
For windows 7 users:
X570 motherboards from ASUS, GIGABYTE, and MSI run windows 7. Only some ASRock X570 motherboards do not.
If you are buying a new mobo, avoid ASrock
