I use mediamonkey, and I would say make a separate folder of all the mp3's you want to use in the car, add that folder to the Mediamonkey library, and normalize just that folder....thereby leaving your originals untouched. That way, it doesn't matter that the leveling is permanent....your originals will still be safe!
I did basically the same thing with my old MP3 player that I used at work, plugged into a stereo.....made copies that were normalized just for that, then I deleted them from my hard driveafter loading them on the player.
