Is it safe to use current disc partitioning tools with SSD's?

Yes, it's fine. However, you'll get better performance if you buy two smaller SSDs.

The solution rich people use is this:

SSD for each OS

1-2TB Conventional Drive for Storage/Data/ETC (Partition this as much as you want)
