Most every month after I do the Critical (generally IE) & sometimes an Important one or two, I have a tendency to Hide several if not all the rest just because I don't understand them or think they don't really apply to me because I'm the only one on here, only one PC in house, 1 printer, no mobile apps, etc.,etc. Am I setting myself up for a problem down the road by not having some? Maybe it's best to just go ahead & install everything? At the moment I probably have 10 or so hidden over the last several months.

It's ALWAYS best to install ALL Critical or Security updates - whether you understand what they are about or not.
Important Updates (so long as they aren't Security updates) you can pick and choose to a certain extent.
Recommended updates, may speed the machine's response a little, or reduce the chances of crashing.
Optional updates are at your discretion - I routinely hide Bing installs/updates and think about whether the end user is going to want Silverlight or not (mostly probably not) before either installing or hiding it. In both these cases the entry gets unhidden the next time it's updated.

I'm still working on this and this one is really confusing, KB2800095. It's in my list as Recommended. I clicked on the More Info link & it says "only apply this hotfix to systems that are experiencing this specific problem". From that wording I would guess that I should NOT do it because I don't even know what a "USB-ICCD-compliant smart card device" is so at this point I guess I'm NOT Experiencing a problem.

NoelDP. Just thought I would mention KB2800095 was installed on my computer on 9 April 14. I always install all updates that come through from MS. I just mentioned it for your information.
It'll be in either the System or Application Event logs - unfortunately the KB article isn't specific.
You can try filtering on WUDFHOST as a Keyword in each (it may or may not work).
