What does my ISP see when I use a VPN?

If I'm using a VPN, does my ISP know that I'm using an encrypted connection? That's what VPNs do, right? Encrypt data and send it to a node located in the middle of nowhere? Is a ISP just a giant honeypot? :sarc:
