Win 7 and Server 2008 R2

Do you mean the same HDD or the same DVD (aka a backup disk)?

If it is the latter then I don't believe you can, but if it is the former then yes as long as you create a separate partition for etch OS (http://www.sevenforums.com/tutorials/2674-partition-volume-create-new.html)

I don't believe it will make much of a difference for server 2k8 and win7.

I would suggest installing Windows 7 first

Install 2008 R2 first so Windows 7 will automatically configure the Windows dual boot menu.

Have you considered NOT doing a dual boot, but rather using virtualization software and running Server 2008 R2 as a virtual machine?
