Can someone explain to me what these are becuase I've read folk getting free windows 7 signature editions which sound good.

So if I apply, and become a host, I get free stuff sent to me and if I were to invite friends then I don't have to do anything else?

Just that things like these that seem too good to be true always have strings attached.

As a host you do have to do something. You have to demonstrate some of the features/improvements of Windows 7. But Like I said earlier - your more than likely to late as there are still a lot in the que who still havent been accpted as a host.
