Because of my work i need to have my PC running all the time. And i don't need to be "on him". So the problem i'm having is to know: How can i turn OFF PC restarts after downloading some updates for windows. I mean, i'm sick of coming back to PC after few hours just to find out that he downloaded updates and restarted him self! I've been searching for that option in system properties and in control panel but with no help. So, can anyone tell me "step by step" how to find that option (if it exists) and how to turn it off.

If I'm understanding correctly you computer is getting Windows Updates and when necessary rebooting your computer. If that is correct your Windows Updates are set to auto download and install. You can set it to Download and let me choose to install.

Please note: What ever method you choose if the update needs a reboot to complete installing you will have to do it manually or let Windows do in automatically.

I understand completely. I do mine manually and check several times a day for Windows updates. Then I reboot her when I want to.
