I would appreciate being able to restore to "X" also --- I spend a lot of time customizing practically everything on my system and hate the thought of having to do that all over again.
So why not simply use VirtualBox or something similar and instal Win7 as a virtual machine? Ever since I started poking around the system files to customize the OS I'd test it in a VM first.
I'm not sure what a System Restore type of function (i.e. restoring to "X") has to do with the regular usage of Win 7. But the answer to your question is that, being a legal professional, I need the functions of the full Windows and MS Office Suites loaded onto my system.
PS Although, testing apps in a vm IS a good idea --- but once tested and approved, I prefer (and need) to download them.
