First, asking a question like that is like asking which is better, AMD or Intel. Everybody has their opinions, reasons and personal preferences. As far as waterblock, for the CPU, I'm perfectly happy with my XSPC Raystorm. I get decent temps and most studies rate it among the best with restriction. For Rads, you have quite a few choices. XSPC, Alphacool's Ocool NexXos UT60, magicool Ultra, coolgate and several others make good rads. The rservoir is up to you and depends on what look you are going for. They technically are not even necessary, only a holding place for water and a way to add water to the loop and be able to see if water is needed. It really depends on what look you are going for and what case you have in order to determine look, size and where you can locate it. And, size does matter inside a case. There are a lot of cases from extremely expensive to expensive to reasonable. They will all do the same thing. The Mountain Mods and Case Labs and even the Silverstone cases are, to me, extremely good but absolutely excessively expensive. The Corsair 900D and the Cooler Master Cosmmos new case are just more than I want to pay, but are good cases. There are a few reasonable cases that will hold everything I mentioned and more and priced very reasonable and well made. But, cases are personal. It is needs to be functional, have good air flow, hold all yourequipment and have the features you want. After that, it is what look you like and build quality.

Actually, you chose the very expensive parts. Most of what we added was because of your choices. You chose the Board, CPU and GPUs. Those are the most expensive parts. The water cooling I suggested is not as expensive as you may think and is more mainstream overclockers cooling. Yes, it would cost $1000-$2000 for an excellent set up that will keep all your toys cool, but you said fantasy. You can just cool the CPU for $350-650, with a good set up. And none of the water cooling is going to pull a lot of current. Your 2 780 TI's are though.

I don't know how old you are, but my SSds will be able to be used by my Grandkids after I'm gone. You will be wanting to upgrade to new technology before you wear your SSDs out. Raid or no raid. I still say there is no performance difference with raid SSDs in real world terms, only in benchmarks unless you are transfering 10 GB files back and forth. But for a mainstream OS there is no advantage except space. But, now you can buy larger SSDs than you used to be able to buy, so that is not an advantage anymore. There are servers who would benefit from a bunch of large SSDs in raid, but for 99% of us, no help.

The size of the radiator. A 360 mm rad will be covered by 3 120mm fans. a 240 mm covered by 2 120 mm fans. a 360 mm rad is slightly over 14" long. and get 60 MM thick rads (2.4")

And all I would play is Minecraft. I bet I would be able to play in the highest settings in everything! Just imagine how smooth the game would be. I wish I could actually make this and use it as my gaming pc. It would be a BIG jump from my Dell Vostro 400 which is meant to be used as a workstation.

Cooling, either air or water depends on surface area to take the heat out of the cooling medium. The more surface area you have, the better cooling you can get. Water absorbs heat better than air. And an air cooler with that much surface area would not fit any case and you would not want it if it did. I have a 360 mm Rad and just bought a 240 MM rad and am kicking myself for not getting another 360 instead of the 240.

As far as the PSU, 1500W is probably overkill, but personally, I like overkill, to an extent. I really don't know much about Enermax, I usually recommend Corsair, Seasonic, XFX, Antec or EVGA. Most of those I listed are made by Seasonic.

Paste is a personal preference. An excellent test I saw measured the top 15 pastes as well as you could measure them. What struck me was the top 8 brands were about 2-3 deg. C between them. I have used both of the ones you mentioned and quite a few more. Personally, I use Noctua NT-H1. But any of the top brands are good. The Artic silver MX brands are good too. You sound like you are starting the build. Usually which paste is the last question you ask. LOL
