Update Happened w/o My Consent

Recently I had to do a sys restore and noticed that one of the 'points' was for a date that an update was installed. I have my system set for non-automatic, always ask before installing. Why/How could this happen?

What anti-virus app are you using?

It was an 'Optional Update' (MSSEssentials). I went back to my settings and discovered that only 'Important Updates' was disabled. I unchecked the one for MS Updates and immediately got a warning that I would no longer get these updates. I think 'Optional Updates' should not install automatically.

You could update MSE via a scheduled task and a command line switch...
...that would let you disable the 'Optional Update' setting within Windows Update.

Note if you are running Silver Light you are likely to get similar silent updates. So far they never hurt my machine. But still I didn't like the idea they were creeping in without me noticing.

MSE will ALWAYS update - it uses a different installation mechanism to normal updates.
If you want to disable MSE definition updates you have to do that in the MSE interface, not WU.

I don't know what has changed. With my sys. configured to 'always ask' (thereby allowing me to select the updates I wanted), MS Security Essentials updates were always listed as 'optional' and I would select these as well as the 'important' updates. This is now changed apparently. So I wonder, if I uncheck the auto-update box for 'Microsoft Update', will it still inform me of their availability when I run a check or when I get the auto-notifications? This should have been setup for the user the same as 'Recommended Updates'. Yes, No?

MSE Definition updates are installed on a Scheduled task - not by WU unless you specifically request it. They are only optional in the sense that you can opt to manually install them through WU. Engine Updates are classified as Important -but are installed through WU.

What is your actual antivirus program being used ?
If it's MSE why would you want to turn off definition updates for it,
As far as I've noticed MSE updates are indeed Optional and not located in the Important category
I personally manually scheduled a task to load them because I got tired of updating MSE manually,

The only way a Important update would hit for MSE would be if the entire program was replaced by Microsoft which it basically was a week or two ago so this might be the update your referring to,
But MSE as a whole is a Optional program as far as I know unless Windows defender has undergone some major changes in windows 7 :/

I am afraid I must be confused. Why are there MSE updates included with the standard Windows updates if they are automatically installed? Since I have never seen a MSE automatic update enable/disable feature in the MSE interface I always assumed the updates were associated with 'standard' Windows Update. So when I set up my system to 'always notify', and I would see MSE updates included whenever MS released a set of updates, I was quite perplexed when scanning the update history to find MSE updates occurring on dates when no Windows updates were released. And now, NoelDP comes along and tells me I can disable MSE updating via the MSE interface (which I still cannot locate). And it's not that I want to 'turn it off', it's that I want to be informed when updates are available and manually install at a time of MY choosing.

As far as I know however you set Windows Updates is also the way you will receive MSE updates. That is if you have chosen MSE as your anti virus.
MSE does not come with Windows 7. You have to choose to install MSE.

I have mind set to (Check for Updates but let me choose to download and install)
I manually check for updates several times a day.

If you check for updates using MSE you will only receive updates for MSE.
If you check updates using Windows Updates you will receive Windows 7 updates if there are any and MSE updates at the same time.

MSE is my chosen anti virus and what I expect to happen does not, as I have described.
