If you want to run a Server I recommend the appropriate version of Windows server 2008 or 2008 R2. If you are looking at a Home Server why not give Windows Home Server Code Name Vail a try. You can download it for free from WINDOWS HOME SERVER | Microsoft Connect. Just as a warning this is technically a public beta but is based on a totally stable OS so you may find the odd bug.
