Both methods are very fast and easy to set up. For instance using Virtual PC it's just a few mouse clicks and a couple of seconds to set up a second vhd to an existing virtual machine.
There are cons, too: first, you need to have Virtual PC and at least one virtual machine installed. Second, Virtual PC does not accept vhd's over 127 gigs.
Disk Management option does not have this size limit.
