I review for ASUS and of your final choices I would go with the Maximus; the fact that it is mATX should not matter unless you are wanting to run 3-way SLI.

If you are not concerned with the SSD cashing for the ability to take advantage of the processors video capabilities then I would strongly recommend you go with the Maximus IV Extreme which is a great performer.

So it would be fine with a two way? I've read that a 3-way is pointless so at some point I might get a couple of 580s. Would they fit fine?

Sorry for the late response; yes, two 580s will fit but I would not recommend any three slot cards.
