Cannot view dual monitors with ATI 3400 series

I have a ATI graphics card on Win 7 machine. I am trying to use a monitor and a projector. The monitor is connected by a DVI to VGA adapter an the other to S-Video. I normally have 2 VGA's but since the VGI port in the wall that connects to the projector is broken, I am forced to use S video for the projector instead.

When I try to connect the two monitors in the screen resolution window I am either given the option to use 1. The monitor or 2.the projector but it will not allow me to connect to both. The extend, duplicate, and do not display drop downs are displayed but when one is selected one of the two screens goes blank.

I don't know much about multiple displays, but try changing some menus when your press Windows key and P.
