Depends on which Anti-Virus program you are using... Each Anti-Virus has different method of disabling.
Tell us that and we will able to help you further.
If you want to disable it from Startup, use CCleaner's Startup Manager or MSConfig's Startup Manager.
If you want to disable it, you normally need to get into the settings.
And if you want to remove it, use an anti-virus removal tool:

some can be shut down from the av's control panel.
Some can only be uninstalled period.
