HDD partition help needed (by removing drive from laptop)

Hi
I have a laptop which i got from university. It came with windows 8.1 pro installed in GPT mode, UEFI enabled and secure boot enabled.
I managed to turn off the UEFI and change it to legacy type, then turned off secure boot.
I want to know something while you format the drive and make partitions. There is something confusing.

If you remove the drive from laptop, connect it with a USB kit and connect it to another computer (say desktop) via USB and use a software such as "ease us partition master" to make the partitions of the hard drive. It will make partitions setting one primary and other as logical. That is simple. BUT it won't make that "system reserved space" of approximately 250MB or something and an non-partitioned space of 8MB.
However if you make partitions using windows installation media, it will make those two drives. I want to know what is the real purpose behind them? Are they really needed? If i make partitions via some external partition master and don't make these two drives, will the operating system be installed fine?

Please guide me in this regards

Question one, why are you doing this. are you downgrading to Windows 7? If so, see this tutorial:

How to Downgrade Windows 8 Preinstalled to Windows 7

When installing Windows 7, delete all partitions then leave the drive unallocated and press Next. The installer will create the partitions it needs.
