How do I start from scratch

I am looking at the windows 7 direct download page and was curious which ISO I will need to put on a thumbdrive?
There is Windows 7 Professional N x64 RTM with different ISO numbers, Windows 7 Professional x64 SP1 (old), Windows 7 Professional N x64 SP1 U (media refresh) etc.

Please forgive me if its already been stated.

Does the COA sticker on the laptop say Win7 Professional, and is the Product Key still readable? If so then it should work with the Pro w/SP1 Media Refresh.
